Plant Profile: Kale (Brassica oleracea)

Our winter crop highlight is Kale! A member of the cabbage family, kale has been part of the human diet since 2000 BCE and is grown around the world. For most of the twentieth century,  kale was primarily used in the United States for decoration rather than consumption. In the 1990s, it began to be used more for food because of its outstanding nutritional value; kale is high in vitamins (A, C, K, B-vitamins), minerals (phosphorus, potassium, calcium), protein, and fiber. Kale is a winter crop that is known to become sweeter after a frost.
